Our wide range of qualities includes hams and Iberian baits of bait, field bait and the highest quality of acorn in 50% Iberian and 100% Iberian, in this last quality we can also find 100% Iberian acorn-fed ham D.O.P. Jabugo Summum.
All these categories of Iberian hams and shoulders have a quality endorsed by the certified companies which verify the racial purity of the Iberian pigs, breeding and fattening as well as the correct slaughter and final healing process.
The new Iberian Quality Standard classifies hams and shoulders according to their breed and diet as follows:
100% Iberian acorn-fed ham, is the one whose mother and father are 100% Iberian breed with an extensive breeding and whose feeding is based on natural resources during most of the year ending their feeding on acorns during the Montanera in the months from October to March.
The Iberian acorn-fed ham is that of the Iberian breed but its racial purity is 50% or 75%. With extensive breeding and feeding based on natural products released, completing their diet based on acorns and grasses.
Iberian bait ham, comes from Iberian pigs fed intensively based on feed made from cereals and legumes, racial purity can be 50%, 75% or 100%.
What do the colors of the seals mean?
A different colored seal will be incorporated for each designation that will be placed on each Iberian ham and shoulder according to its category:
Black, 100% Iberian acorn ham.
Red, Iberian acorn ham.
Green, Iberian field bait ham.
White, Iberian bait ham.
